There is something comforting and very satisfying about sitting down to a bowl of fried rice, but with over 60g of high glycemic carbs and 50g of fat in an average bowl, it can be a very unhealthy meal option. But you can still enjoy the delicious taste of fried rice by making your own and substituting Jasmine rice for cauliflower rice.
Full of above ground veggies, this recipe offers a easy to prepare, nourishing alternative to traditional fried rice.
Ingredients 1/2 medium Cauliflower 1/2 cup Peas 1 large Carrot 2 medium Organic Eggs 4 tsp Coconut Oil 1/4 tsp Garlic Powder 1 pinch Each of Salt and Pepper 3 tsp Organic Soy Sauce or Coconut Aminos 1/2 tsp Sesame Oil
Directions: Step 1
Break cauliflower into florets and in a food processor, pulse blitz until the consistency of rice and set aside
Step 2 Finely dice carrot and add to blitzed cauliflower Step 3 In a hot frying pan, add two teaspoons of coconut oil and crack two eggs and scramble. Set aside
Step 4 In the same pan, reduce heat to medium and add another two teaspoons of oil, cauliflower, diced carrot and peas and stir to mix and coat with oil. Step 5 Cook for two minutes then add soy sauce, sesame oil, garlic powder and season with salt and pepper. Stir through and cook for a further two to three minutes.
Step 6 Stir through scrambled egg, cook for a further one or two minutes, then remove and plate.
Tip: If you find the mix a little dry throughout cooking, try adding a little water or organic vegetable stock.
